Soup Ingredients

  • 2-3 Chicken breast
  • 3/4 cup onion chopped (I use sweet yellow)
  • 1 small package organic frozen sweet corn
  • 1-2 cans organic black beans (drained and rinsed well)
  • 1-2 bell peppers chopped ( I prefer 1 green and 1 red or orange for color)
  • 1 can organic fire roasted tomatoes (can use 1 cup fresh diced tomatoes if available)
  • 16 ozs chicken stock
  • Juice of 1 freshly squeezed lime
  • 1 tbs cumin
  • 1/2 tbs chili powder (add more if desired)
  • Salt & garlic powder to taste (I use World Markets Garlic & Sea Salt seasoning)

Topping Ingredients & Suggestions

  • Monterey Jack cheese
  • Cheddar cheese
  • Sliced avocado
  • Greek yogurt (healthier substitute for sour cream)
  • *Totilla chips (soup is great with or without chips!)
  • *1/4 cup freshly chopped cilantro (I omit cilantro all together because husband can’t stand the taste of it. If you like it, you can also add an additional 1/4 c to slow cooker soup ingredients)

Directions

  • Combine all soup ingredients into slow cooker
  • Cover and cook on low heat for 6-8 hours
  • Shred chicken using two forks
  • Stir and enjoy topped with your favorite toppings or alone… It’s that good!
