This recipe is a favorite of mine because of how simple, yet versatile it can be! Plus, the coconut milk adds this sweet creaminess that is unbelievable and makes you feel like you are indulging!


  • 2-3 Chicken breast (humanly raised)
  • 1 can organic fire roared tomatoes
  • 1 can organic tomato sauce
  • 1 can coconut milk
  • 2 tsp Italian seasoning
  • 1 head of organic cauliflower (can use pre cut and bagged cauliflower rice to save time)


  • Combine Chicken, tomatoes, coconut milk and seasoning into slow cooker
  • Cover and cook on low heat for 6-8 hours
  • Cut cauliflower into chunks and steam.
  • Place cauliflower chunks into food processor and pulse to desired rice like pieces.
  • Serve over Creamy Tomato Chicken over cauliflower rice and enjoy!

Additional serving suggestions (in case you aren’t into riced cauliflower):

  • Add veggies of choice. It is great with a chopped spinach thrown into the crock pot during the last hour of cooking. Can add any veggie you choose!
  • Serve over spaghetti squash.
  • Shred and serve in wrap with peppers, leafy greens.
  • Add as topping to baked sweet potato!
