• 4-6 whole organic carrots
  • Fresh mint
  • 2 oranges
  • Olive oil
  • Salt & pepper if desired


  • Peel and cut carrots into 2-3 inch halved pieces
  • Place carrots into large mixing bowl
  • Drizzle olive oil and toss, lightly coating carrots
  • Roast carrots at 425 degrees until tender (anywhere from 20-35 minutes depending on size of carrots)
  • While carrots roast, cut peeling off of oranges then slice oranges (slice end to end, no wedges)
  • Remove mint leaves from stems and chop (recommend at least 6-8 mint leave, more if desired. I love mint and typically use more)
  • Place sliced orange, mint and carrots in large bowl and toss
  • Add sprinkle of salt and pepper if desired (I skip this step. The flavor of three ingredients (carrots, oranges and mint) are so good by itself in my opinion.)
  • Serve and enjoy!
